Is there a law in California about undisclosed pay cuts?

There is nothing you can do at this point other than not choose to do the merchandising job since it is optional. The company has the right to pay different rates for different jobs but the difference needs to be explained. Since you have been with the company for 5 years only working in sales, you probably do not remember being told about the different rates as you didn't think it would apply to you.
